Primal Grain-Free Pancake Recipes - It CAN be done!

Can you make pancakes without flour? Yes. I've always experimented with our pancake/waffle recipes; trying all sorts of different ingredient substitutions.

I've made them with coconut flour, pea flour, oats, yogurt, whey, almond milk, soy milk, coconut milk, whole wheat flour, flaxseed meal, almond meal, walnut meal.... The combinations are endless and some work better than others.

But let's say you want a flour-less (and grain free) pancake recipe that's light, airy, and tastes like a regular pancake. I've done it and you can too.

Here are my favorite primal pancake recipes. Feel free to tweak them to make them work for you.
Grain-Free Pumpkin Pancakes

Grain-Free Primal Pumpkin Pancakes (dairy free too)
2 Eggs
1/4 cup pumpkin puree (not pumpkin pie mix!)
1 Tbsp almond butter
1 tsp pure vanilla
1 tsp real maple syrup (or honey)
1/2 tsp cinnamon
1/8 tsp cloves
1/8 tsp nutmeg
1/8 tsp ginger
1 tsp coconut oil (or butter/olive oil/other healthy fat)
2-3 tsps ground flaxseed (to adjust texture - add more if the batter is too runny)

Directions: **This is the most important step** Beat the eggs until they are frothy. If you don't do this, the batter will not set right and is why most people give up on grain-free pancakes. Then add all the other ingredients except the ground flaxseed. Add ground flaxseed a teaspoon at a time until your batter has the consistency of your regular pancake batter. Then make small pancakes. Grain-free pancakes are harder to flip than regular pancakes. But they are so worth it.

Grain-Free Banana Mini Waffles

Primal Banana Pancakes (No grains or dairy)

2 Eggs
1/4 cup mashed banana (about 1/2 a banana)
1 Tbsp almond butter
1 tsp pure vanilla
1 tsp real maple syrup (or honey)
1 tsp cinnamon
1 tsp coconut oil (or butter/olive oil/other healthy fat)
2-3 tsps ground flaxseed (to adjust texture - add more if the batter is too runny)

You can also use these recipes to make waffles (see the picture of my banana waffles above - but again, make them small, flipping will be easier)
