Chicken & Zucchini Pesto Toss

Ingredients:
2 Zucchini (julienne or slice finely with a vegetable
peeler)
2 Chicken Breasts (cut into strips)
1 Jar of Basil Pesto
3 Carrots (julienne or slice finely with vegetable peeler)
1 Chopped Tomato
2 Cups Fresh Spinach (or 1 cup frozen spinach -thawed and drained)


Directions:
Saute or grill the carrots and zucchini until soft. Remove veggies from pan and saute or grill the chicken. Add the veggies and spinach. Put the lid on the pan to wilt the spinach. The mix in the pesto and raw chopped tomatoes. 




I know this looks really green, but it tastes amazing. Fresh Veggies can't be beat and there is no substitute for the yum of pesto. This recipe is primal and can easily be made vegan or low-carb - and with only 6 ingredients, the prep time is quick!

I learned (and like) that the Blue Cash Everyday card has NO annual fee (the other one does!).

Here is my recipe:
Roasted Fish & Potatoes
•1 ½ lbs of fish (sea bass, cod are good)
•3 cloves garlic
•2 tablespoons extra-virgin olive oil
•1 large sliced onion
•6 small all-purpose potatoes, peeled and thinly sliced
•3 tablespoons fine dry breadcrumbs

1. Preheat oven to 450°F.
2. Mince 2 cloves of garlic and place in a small bowl and whisk in 1 1/2 tablespoons oil. Put onion in a 9-by-13-inch roasting pan; add dressing and toss to coat.
3. Add potatoes and cover tightly with foil and bake until potatoes are tender, 35 to 40 minutes more.
4. Meanwhile, mince remaining clove of garlic and place in a small bowl. Add breadcrumbs, remaining 1/2 tablespoon oil and you can season with salt and pepper if you want to (optional – not in ingredients list). Mix with your fingers until blended.
5. Once potatoes are tender, place fish on top and sprinkle breadcrumb mixture over all.
6. Roast, uncovered, until the fish is opaque in the center and breadcrumbs are browned, 10 to 15 minutes.

I like the Blue Cash Preferred Card because it gives you 3% cash back at gas stations, and gas is so expensive now.

My recipe is our family recipe for Sausage, Peppers and Onions.

Needed:
- 1 pound of Sausage
- 1 red pepper
-1 green pepper
- 1 white onion
- olive oil
- salt and pepper to taste.

Slice peppers and the onion. Add them to a pan with some olive oil and heat them until they are almost carmalized (15 minutes or so). While they are cooking toss whole sausages into the oven to begin cooking.

Take the sausages out and slice them up. Add the pepper and onions and roast until complete. Season. Some people like to add red sauce to the mix. Enjoy!

I like Blue cash preferred because of 3% back at gas stations. Could really use that as we use gas a lot and it's so high!

My recipe:

Pizza Pasta Bake

1 box of Whole Wheat rotini pasta
2 jars of Ragu pizza sauce
1 bag of turkey pepperoni
1 bag of shredded mozzarella cheese
1/4 cup of black olives sliced

(can add peppers, sausage, or any other pizza toppings of your choice!)

Cook pasta according to package; undercook by a couple of minutes. Put pasta in a large rectangular baking dish. Add Sauce and mix through pasta thoroughly. Then add pepperoni slices and black olives. Top with shredded mozzarella cheese. Bake at 350 for 30 minutes.

Although the Blue Cash Preferred card has a $75 annual fee, you do earn $100 cash back if you spend $500 in 60 days. That's just a couple trips to the grocery store for us!
Main Course Recipe (Breakfast)
I make this when we have company staying over so I usually double it. This recipe is for a family of 4 good eaters.
Breakfast Casserole
6 eggs, 2 cups milk, 1 lb pack of bacon, 4-5 slices of bread, 2 cups cheddar cheese and 2 tomatoes.
You need a 2 quart buttered casserole dish. Your oven should pre-heat to 350 degrees.
(whisk eggs with 2 cups of milk and set it aside)
Take 4 pieces of bread and tear it up in 1 inch pieces and place it on the bottom of the dish.
Cook and crumble a package of bacon. (drain that grease off really well)
While your bacon is cooking, dice up 2 tomatoes.
Grate 2 cups of cheddar cheese (or use that pre-shredded cheese that comes in a package.)
Now, put the bacon on the bread, add the diced tomatoes, add your cheese, pour your egg mix on top. Do this as evenly as possible.
Bake this for 35-40 minutes. It should look kind of puffy and browned. I serve fresh fruit as a side but that's more than 6 ingredients so forget that.
Ring the bell and tell folks to come and get it. That's it. Like I said, I double this and use a bigger casserole dish for overnight company. It bakes while we enjoy chatting over coffee in the mornings.

Chicken Spiedini Recipe -

3 lg. boneless skinless chicken breasts
Asiago cheese, cubed
3/4 c. high quality olive oil
2 c. Italian bread crumbs
3 dried bay leaves
1 lg. vidalia onion, sliced thickly lengthwise

1. Preheat oven to 350 degrees.
2. Spray a baking pan with cooking spray.
3. Cut a pocket in each chicken breast.
4. Stuff Asiago cubes into pockets and secure with toothpicks. I suggest soaking toothpicks in some olive oil before hand.
5. Dip chicken in olive oil and then coat with Italian bread crumbs.
6. Coat a skillet with olive oil and heat.
7. Place chicken in heated skillet and lightly brown on both sides.
8. Remove and place browned chicken breasts into baking dish.
9. Top each breast with bay leaf and lastly thickly sliced onion.
10. Place in oven and bake for 45 min. to 1 hr. or until chicken is cooked through and cheese is melted.
11. Remove bay leaves and toothpicks.
12. Serve and enjoy!

I usually serve this dish with a side of pasta and marinara sauce.

I love the simple cash back aspect of the card - no points system with complicated rules and rewards that I don't need!

Here is my simple summer salmon recipe. The key is that you need really fresh salmon. I like going to Costco on Thursday to get the freshest wild caught Alaska salmon to use...

Ingredients:
1 tablespoon garlic powder
1 tablespoon dried basil
1/2 teaspoon salt
4 (6 ounce) salmon fillets
2 tablespoons butter
4 lemon wedges

1) Stir together the garlic powder, basil, and salt in a small bowl; rub in equal amounts onto the salmon fillets.
2) Melt the butter in a skillet over medium heat; cook the salmon in the butter until browned and flaky, about 5 minutes per side. Serve each piece of salmon with a lemon wedge.

How simple is that? And it's really healthy too - with plenty of omega-3s!

Here's one more recipe I'd like to enter - it's a grilled steak with avocado salad - perfectly refreshing for the summer. And avocado has good fats too! Just choose a lean steak and this will be really healthy :)

Ingredients:
2 avocados
1 cup grape tomatoes
1-1/2 cups mixed salad greens
1/4 cup honey Dijon salad dressing (or raspberry vinaigrette!)
4 ribeye or tenderloin steaks
Salt and pepper to taste


1) Prepare and preheat grill, or broiler.
2) Peel avocados and chop; combine with tomatoes and greens in serving bowl. Drizzle with salad dressing and toss.
3) Season steaks with salt and pepper and grill or broil until desired doneness (my family prefers medium rare!) Place on serving plate and top each steak with some of the avocado mixture. Serve immediately and enjoy!

Boil or steam until tender.
Puree in blender, adding chicken broth and curry to taste.

ingredients:

- 2 liter bottle of rootbeer


Place ham in a slow cooker; pour rootbeer over ham until covered.
Cover and cook on low setting for 3 to 4 hours!
Slice it up and enjoy :)

I just thought of another great recipe - for cornflake chicken!

Ingredients:
Chicken breasts or drumsticks
1 small can of Condensed milk
½ small box of corn flakes
salt and pepper to taste
olive oil

Dunk the chicken in a large bowl containing the condensed milk and coat well. Crush corn flakes along with some salt and pepper in a large plastic zipper bag. Shake the bag to distribute the salt and pepper. Place the chicken, one or two pieces at a time into the corn flake mixture and shake to coat evenly.

After all the chicken is coated, cook it in a skillet with olive oil, browning it at first and then turning the heat down so as not to burn the chicken. You'll need to check for doneness, depending on the thickness of the chicken

I like to serve this with grilled bread and a simple salad.

Sour cream chicken risotto is another great option!

Ingredients:
10 oz. pkg. garlic rice and vermicelli mix
1-1/2 cups water
9 oz. pkg. frozen diced fully cooked chicken
2 cups frozen baby peas
1 cup sour cream
1/2 cup grated Parmesan cheese

Prepare the mix according to package instructions, adding 1/2 cup more water. Five minutes before the rice is done, stir in the chicken and peas. Cook until rice and pasta are tender, stirring frequently. Remove from heat and stir in sour cream and cheese. Cover and let stand 5 minutes before serving. This makes 4 servings

One more salmon recipe...because it's our favorite fish!

Orange salmon - so easy I make it in the microwave oven!

Ingredients:

4 (4-ounce) skinless, boneless salmon fillets
2 Tbsp. butter, melted
5 Tbsp. orange juice
2 tsp. cornstarch
1/8 tsp nutmeg
1/4 tsp. salt or pepper

Preparation:

Place fillets in 2 quart microwave safe baking dish. Combine remaining ingredients in small bowl and mix well. Pour over fish. Cover casserole with plastic wrap, venting one corner, and microwave on HIGH 3-6 minutes, or until fish flakes easily with a fork, rotating dish once during cooking time. Let stand for 4 minutes before serving. This makes 4 servings.

I really like the increased cash back on groceries, as compared to the regular Blue Cash. My recipe is for Kalua Pork:
2-5 pound pork butt roast (strings removed)
2-4 tablespoons rock salt (preferably seasoned, if available)
1/2-1 head cabbage, shredded
1-2 tablespoons vegetable or olive oil

Place the pork roast in a slow cooker and coat with salt on all sides. Cook for 4 to 6 hours on high or 6 to 8 on low, until falling apart. Transfer to cutting board or plate and shred.

For the last 40 minutes that pork is cooking, saute cabbage in oil until tender. Combine pork and cabbage in a large bowl and toss to mix well. Serve over hot short grain (sticky) rice.

SAUSAGE AND PASTA BAKE

Ingredients:

1 - 14.5 oz box of Ronzoni Smart Taste Rotini
2 to 3 - 24 oz jars of Prego Heart Smart Traditional Pasta Sauce
1 - 16 oz package of Bob Evans original recipe roll sausage
1 to 2 bags of shredded Italian cheese

Directions:

1. Preheat oven to 375F.
2. In a large pan, add water and cook Rotini according to directions on box and drain.
3. In a separate large sauce pan, crush and cook sausage until brown and drain grease. Add in desired amount of pasta sauce and heat until warm.
4. Add pasta to a 13 x 9 baking dish and mix in sausage and sauce mixture and top with desired amount of shredded Italian cheese.
5. Bake for 20-30 minutes or until heated through and cheese is melted.

This is for Chicken Verde that we make around here all of the time! It’s so good!

Ingredients

4 Boneless Skinless Chicken Breasts
1 Can of Black Beans, Drained
1 Cup of Salsa Verde
1 Cup Shredded Pepper Jack Cheese
1 Lime (actually the juice from it)
1/4 Teaspoon Cumin

Preheat the oven to 450 degrees. Mix the Black Beans and Cumin in a saucepan and heat through. Then squeeze in the lime juice and remove from heat (or put on warm). Sear the chicken breasts in a skillet 3-4 minutes on each side. Put the chicken in a baking dish and then spoon over it with the salsa verde and then top with the Pepper Jack Cheese. Bake until the chicken is cooked and cheese is melted. Put the Black bean mixture on a plate and then the chicken/salsa/cheese on top of the beans. Delicious!

Pizza Pockets

1 - 16 oz pkg. Frozen Bread Dough, unthawed
(or make your own dough)
80 Slices of Pepperioni
1 1/2 C. Mozzerella Cheese
Butter
Parmesan Cheese

Divide dough into eight pieces.

Roll/flatten each piece into an approximately 6" diameter circle.

Layer 6 slices of Pepperoni in the center, leaving about 1" all the way around. Place 1 1/2 TBLS Mozzerella Cheese on top of Pepperoni. Layer four more slices of Pepperoni on the top of the Cheese.

Pull up opposite sides of dough and pinch together. Pull up remaining edges of dough and pinch all seams together. Making sure there are no holes in the dough.

Place each pocket, seam side down on a greased cookie sheet. Leaving 3" spaces between pockets. Spread a little bit of butter on top of each one and sprinkle with Parmesan Cheese.

Place sheet in 400 degree oven, bake for 15 minutes.

Remove and Enjoy with favorite dipping sauce.

4 Ingredient Chicken Stuffed Shells


1 box giant pasta shells cooked al dente
1 box Stove Top stuffing mix prepared according to directions
2 cans chicken gravy
2 chicken breasts (or leftover chicken or store bought rotisserie) cooked and diced

Combine stuffing & chicken
Fill cooked pasta shells with mixture and place in shallow baking pan that has been lightly coated with gravy
Cover stuffed shells with gravy

Cover with foil. Cook at 350º for about 30 minutes

I liked both cards, but would prefer the Blue Cash Preferred. I love that you get 6% back at supermarkets and 3% back for gas. Those are my main two expenses for a credit card. I typically pay mine off every month, but the option to pay back over time is really nice.

Here is my recipe, it's great for summer because you don't have to heat anything up:

Jenn's Chicken Salad

2 1/2 cups diced cooked chicken
1 cup seedless grapes, halved
1 cup chopped walnuts
Seasonings you prefer – garlic powder, onion powder, salt, pepper
1 1/2 teaspoons Worcestershire sauce
1/2 cup mayonnaise

Mix well and refrigerate at least one hour to let the flavors mix. It’s fantastic as a sandwich or rolled up in a lettuce leaf.

Serves 5

The Blue Card Preferred has some nice features, what I liked was the 6% back for groceries and 3% back for gas!

Okay, our favorite easy, delicious recipe around here is Pannkaka. Our family recipe for pannkaka has been handed down through several generations of proud Swedes, and even the littlest ones love it. Having this is a big treat at our house. It bakes into a beautiful, golden, just-crisy-enough around the edges oven pancake.

Ingredients:
4 eggs
1 stick of butter
1 1/2 C flour
1 1/2 C milk

- Preheat oven to 425 degrees F. Melt butter. Spray a 9x13" glass pan or similar-size ceramic baking dish with nonstick cooking spray. Pour butter into sprayed pan.

- Lightly beat eggs. Add flour and whisk until incoporated, then whisk milk in until just combined.

-Bake for 25 minutes or until puffy and golden brown around the edges. This dish is very forgiving. Even if you forget and leave it in a few extra minutes, it still tastes fabulous.

- Cut into large slices right away and serve with maple syrup, or, if you are feeling very Swedish, with lingonberry preserves and whipped cream.

I usually make bacon or sausages to go with this. Add a strong cup of coffee on the side and you'll think you died and went to heaven :)

I loved the idea that you can get 3% back from the blue American Express :) and my recipe is a very simple pizza recipe that both parents and kids can enjoy! :)
-1 baguette
-Lawry's garlic seasoning
-1 jar classico tomato sauce (or your favorite)
-1 cup parmesan cheese & mozzarella combined mix
-smoked provolone cheese
-Pepperoni

slice baguette in half and place sauce on top. three shakes of garlic seasoning on the sauce. Then put the mozzarella & parmesan mix on the pizza and top with a slice of smoked provolone cheese. Put the pizzas on a baking sheet and cook at 350 degrees for 30 min. :) Enjoy! This is a quick yummy food for last minute preparations :) The cheeses and seasoning really make the difference! :)

I like that the Blue Cash Everyday card offers unlimited cash back with no annual fee... I generally always use plastic when making daily purchases so both of these cards are appealing to me!

My recipe is for Pita Pizza (2 servings)!

Ingredients:
*2 Pocketless Pitas
*1/4 cup of Shredded Mozzarella Cheese
*2 tablespoons of minced Green Bell Pepper
*2 tablespoons of minced Sweet Red Pepper
*1/4 cup of Mayonnaise
*1 teaspoon of dry Basil

Mix ingredients (2-6 above) in a bowl (mix well); place tortillas on greased baking sheets; spread your mixture thinnly on the tortillas. Bake at 400 degrees for 10 minutes; cut up and serve!

Slap Yo Mama Easy Jambalaya!

Ingredients
1 tablespoon olive oil
1 pound kielbasa, cut into 1-inch-thick rounds
1 28-ounce can whole tomatoes, undrained
1 8-ounce box jambalaya or fiesta rice mix
1 pound peeled and deveined shrimp
1/4 teaspoon hot pepper sauce (optional)


Directions

Heat the oil in a saucepan over medium heat. Add the kielbasa and cook until browned, about 2 to 3 minutes.
Add the tomatoes, crushing them with the back of a spoon, along with their juices and ½ cup of water. Bring to a boil.
Stir in the rice mix. Reduce heat, cover, and cook for the time specified on the package.
Stir in the shrimp and continue to cook, covered, until the shrimp are opaque throughout, 3 to 4 minutes.
Add the hot pepper sauce, if desired. Divide the jambalaya among bowls.

I learned that the estimated annual cash back earning with the Blue Cash Preferred Card is $530...that's pretty sweet!

Recipe for Cheesy Rice and Spinach dinner:
-2 cups of cooked short-grain brown rice
-32 oz vegetable broth
-1 bunch or a 16 oz bag of fresh spinach cleaned and chopped (or buy bag)
-8 oz. favorite shredded cheese

Prepare rice according to instructions on the bag using vegetable broth instead of water. Meanwhile, saute spinach in a large saute pan or wok. Turn off heat. Add cooked rice and cheese. Stir gently with a spoon until blended under low heat. So easy and delicious!

8 cups shredded cabbage
2 cups chopped fennel (one bulb)
1/2 pound smoked turkey breast, cut into bite-sized cubes
1 cup dried cranberries
2 cups chicken broth
1/2 cup cranberry juice

Preheat oven to 425 degrees F. Place cabbage and fennel in a 13 x 9-inch greased baking dish. Sprinkle evenly with turkey and cranberries. Top with chicken broth and cranberry juice. Bake, covered for 30 minutes. Uncover, stir and bake for 30 minutes. Serves 5 to 6.

1 1/2 cups chicken broth

Preheat oven to 375 degrees F. In a large skillet, heat oil and brown chicken. Place chicken in a shallow baking dish and surround with Brussels sprouts. Sprinkle onions and rosemary over the chicken. Add broth. Cover baking dish. Bake for 20 minutes. Uncover, increase oven temperature to 400 degrees F. and bake for 30-40 minutes or until sprouts are cooked through. Serves 4.

Greek chicken wraps

4 pieces large flatbread or tortillas
4 pieces cooked chicken tenderloin
juice from 1 small lemon
1/2 cup plain yogurt
1/4 cup chopped fresh cucumber
1/4 cup chopped fresh parsley

In a small bowl, mix together the lemon juice, yogurt, cucumber and parsley. Place one tenderloin on each flatbread and top with yogurt sauce. Fold in half and serve.

Chicken sausage with Lemon-Parmesan Rice

Four chicken sausages (like al fresco or Trader Joe's brand), any flavor
1 Tbsp olive oil
1 cup quick-cook rice
juice of 1 lemon
1/3 cup grated parmesan cheese

Cook rice according to directions on box or bag. While rice is cooking, slice sausages and grill in medium skillet with olive oil until heated through and slightly browned. Remove from heat. When rice is cooked, mix in lemon juice, parmesan cheese, and sausage. Serve immediately.

Grilled Balsamic Chicken and Broccoli

1 pound chicken breasts
1 pound broccoli
1/3 cup balsamic vinegar
1/3 cup virgin olive oil
salt and pepper
Crusty baguette, sliced

Wash and cut up the broccoli into large pieces (large enough to not fall through grill).
Place chicken and broccoli in separate shallow pans. Pour olive oil and vinegar on top and toss to coat. Top with salt and pepper. Let marinate 10 to 15 minutes while grill heats. When grill is hot, place on grill and cook until done (when chicken is no longer pink inside and broccoli stems are crisp-tender). Remove from grill and serve with crusty bread to soak up extra juices.

Green fish tacos

4 flour tortillas
1/2 pound white fish (like cod or tilapia)
1 small avocado, pitted and chopped
1/2 cup store-bought green tomatillo salsa
1/4 cup fresh chopped cilantro
1/4 cup chopped green cabbage

Cook fish in pan over medium heat until just cooked through, 6-9 minutes depending on thickness. Let cool slightly, then flake fish evenly onto each tortilla. Top with avocado slices, salsa, cilantro, and cabbage. Serve.

10 wonton wrappers
1 lb ground beef
2 Tbsp Kikkoman Quick & Easy Toasted Sesame Teriyaki Sauce or any brand Teriyaki sauce
lettuce, shredded
sliced almonds

Lightly brush the wonton wrappers with olive oil. Drape wontons over a wide edged baking pan to create taco shape. Bake at 375 degrees for 5 minutes or until shells are golden brown. In a pan over medium heat brown ground beef and drain fat. Stir in teriyaki sauce. Place beef in wonton tacos and top with lettuce and almonds.

Goat Cheese and Basil Omelet with Himalayan Salted Blueberries
Per omelet:
2 teaspoons olive oil
3 eggs
1-2 tablespoons goat cheese
2 tablespoons fresh minced basil, extra for garnish
1/4 cup fresh blueberries
Himalayan Pink Salt Crystals with grinder

Heat a small 8-inch nonstick skillet over medium heat, add olive oil and swirl to coat. Whisk 3 egg whites and 2 eggs yolks in a small bowl until foamy. (Discard or save the other egg yolk.) Pour egg mixture into a hot skillet, cook 15 seconds, then move a rubber spatula around the edge of the pan until the mixture is just set, about 1 minute. Scatter desired amount of goat cheese and basil over entire egg surface. Cook about 1 minute or more until desired doneness. Gently fold over half of the omelet. Turn omelet over one time. Transfer to a warm plate and sprinkle with blueberries and fresh herbs. Grind Himalayan Pink Salt Crystals over omelet and chopped basil. Serves 1.

Blueberries with Himalayan Pink Salt is really a wonderful eating experience couple that with an omelet filled with goat cheese and fresh basil. Amazing~ really it is such a simple yet gourmet dish. When you can allow yourself a 7th ingredient sprinkle fresh black pepper or fresh tarragon or parsley on top!

Here's my recipe:

Cheesy Beef and Rice

1 cup long grain brown rice
1 lb ground beef, cooked with onion
1/2 t. garlic powder
1 cup sour cream
1/3 cup milk
1 cups shredded cheddar cheese

Boil two cups of water. Stir in rice. Cover and simmer for 45 minutes. Brown ground beef with onion and garlic powder. Mix with rice and salt well. Stir in sour cream and milk. Spread into a casserole dish. Sprinkle cheese on top.

Place uncovered in a 350 degree oven for 30 minutes, or until bubbly.

This recipe is so frugal and easy, and it freezes well too!

Curried Chicken Salad

2 cups cooked chicken, cut into bite-sized pieces
1 20-oz. can chunk pineapple, drained
1/2 cup chopped celery
1/4 cup fat-free sour cream
2 teaspoons curry powder
Salt and pepper to taste

Combine all ingredients. Serve in a lettuce cup or as a sandwich filling in a soft roll.

This is a favorite simple recipe at my house. I hate regular sloppy joes but this version is delicious! SO incredibly tasty and easy!

Easy homemade sloppy joe's

1 lb. ground beef or turkey
1 medium onion
1 TBS. mustard
1/2 cup ketchup
1 TBS. worcestire sauce
2 TBS. Brown sugar

Brown ground beef with onions. Drain. Combine other ingredients in small bowl. Add to beef. Cover and let simmer for 30 to 45 minutes. Serve on buns. Enjoy!

I like the Blue Cash Preferred Card because would save us a ton at the gas station from getting 3%! Gas is over $4 a gallon here!

My recipe is our family recipe for Chicken 'n Dumplins.

Ingredients
* 1.5 lbs of chicken thighs
* 2 cups of chicken stock
* 2 tbl of salt
* 1 tbl of black pepper
* 4 cups of bisquick
* 1 1/3 cup of milk (additional milk if dumplin dough too pasty)



Rinse chicken thighs and place in large stock pot. Cover with water to just cover the top of the chicken breasts. Add in two cups of chicken stock. Bring to rapid boil chicken thighs until fully cooked. Check doneness at 30 minutes. After chicken is done cooking set on plate to cool. Remove excess fat from pan and strain the stock. Bring the stock back to a boil. While the stock is reheating mix the Bisquick and milk. Add additional milk if too thick.

After the stock has returned to a boil, drop spoonfuls of dumplin dough into the boiling stock. Be careful to avoid dropping on top of other dumplins. Try to keep them from touching as much as possible. Cook dumplins uncovered for 10 minutes, then cover and let cook for additional 7-8 minutes.

While dumplins cook, remove chicken from bone and remove excess fat. Shred the chicken and set aside.

After dumplins are done, add in chicken and stir well. Add in salt and pepper. Stir well. Add additional salt and pepper to taste. Enjoy!

This recipe is a family favorite. You can either serve it over rice or noodles, but either way it is fabulous and easy!!

Sweet & Spicy Chicken

4 chicken breasts
1 packet McCormick's (or other brand) mild chili mix seasoning
1 tsp. Cumin
1/4 to 1/2 tsp. cayenne pepper (depending how hot you like it!)

Glaze
6 TBS Honey
2 tsp cider vinegar

Mix seasoning packet, cumin and cayenne pepper and rub over chicken. Saute rubbed chicken in saute pan until cooked through. Mix glaze ingredients and pour over chicken. Turn heat to medium low and cover. Let simmer for 10 minutes and remove cover. let sauce bubble and turn to thick glaze. Serve and enjoy!

Spicy Spinach Quesadillas

4 10-inch whole wheat flour tortillas
12 ounces shredded Menonita, Oaxaca or Cotija cheeses, or a blend
1 cup minced red onion
1/2 cup canned, sliced jalapeno peppers, drained
1/4 cup black olives, sliced
1 cup shredded fresh spinach

Preheat oven to 425 degrees F. On a pizza pan or cookie sheet, place two tortillas. Sprinkle each with one fourth of the cheese and one half of the onion, peppers, olives and spinach. Top each with a remaining tortilla and sprinkle with the remainder of the cheese. Bake for 8 to 10 minutes or until cheese is melted and browned. Let cool for 5 minutes. Cut into wedges. Serves 4. Serving suggestion: have sour cream, salsa or guacamole to serve along side wedges.

South of the Border Casserole

2 cups cooked brown rice
1 1/2 cups tomato salsa
1 teaspoon chile powder
1 15-ounce can black beans with liquid
1 cup frozen yellow corn kernels
1/2 cup shredded sharp cheddar cheese

In a medium bowl, combine all ingredients except cheese. Spoon into a lightly greased baking dish. Top with cheese. Bake at 350 degrees for 25 minutes or until cheese is melted. (Or, microwave for 12 minutes). Serves 4.

I learned that the Blue Card is the only card offering 6% at supermarkets but it does have a $75 annual fee - easily made up for the way my wife shops!

Here is my family's favorite recipe -

Easy Stuffed Peppers (use 1 pepper per person)
5 green peppers - (cut in half vertically, remove seeds and put into baking dish)
1/2 cup brown rice
1 cup shredded mexican style cheese
1/2 pound hamburger meat
1 1/2 cups salsa
1 Tbsp taco seasoning

Cook the hamburger, then add salsa and cooked rice. Bake the peppers in a 350 degree oven for 20 minutes, then spoon the mixture inside and top with cheese. Heat in oven for 10-15 minutes more until cheese is melted.

You can mix this up and add as many vegetables as you want or none at all. You can add any taco type condiments you would normally use.

bag of frozen peas and carrots
Cooking oil
soy sauce
1 egg
Heat fried rice and chicken in oil in saucepan. Add frozen peas and carrots and cook until warmed through. Then make a well in the middle break in an egg and let it sit for one minute. Stir through rice and add soy sauce to your liking and stir through again. Voila!

Preparation:
Heat oven to 350°. Butter a 2-quart baking dish.

Cook pasta in boiling water following package directions. Drain and rinse with hot water. Put the pasta back in the saucepan and add the cheeses, cream, and sour cream. Stir and add salt and pepper. Spoon the mixture into the prepared baking dish. Bake for 25 minutes, or until lightly browned.

Here is my recipe...Delicious and quite simple!

Chicken/Stuffing Casserole

2 chicken breast halves, boneless/skinless
2 cans cream of mushroom soup (condensed)
1 box stuffing

Cook chicken on stove in pot of water. Using the water flavored from cooking the chicken, make the stuffing (according to directions on the package). While the stuffing is cooking, chop up the chicken into bite-size pieces.

Spread cans of cream of mush. soup on the bottom of a 9x13 casserole dish. Spread pieces of chicken on top of soup. Fluff the stuffing and then dish it into casserole dish, on top of the chicken. Spread evenly.

Bake at 350* for 30-40 minutes.

Simple and delicious!! :)

Cook the pasta

Saute garlic and shrimp in butter

Take shrimp out

Use white wine to deglaze and let that burn off. Add a scoop of pasta water to help thicken up the sauce.

Add spices to your liking (I like basil, oregrano, and chili flakes) and parmesan cheese

Add pasta to the sauce and shrimp.

Take thinly sliced roast beef (You can also make in the crockpot and use shredded roast beef)
Get a nice hoagie roll and add the roast beef
Top with the peppers, onions and mushrooms
Add a slice of provolone. You can put in the oven or toaster oven to get cheese to melt.

Nachos (one of my favorites)

Make a layer of chips on the bottom of a baking dish
Brown taco meat and cook taco rice (I love Knorr Rice Packets)
Add a layer of taco meat, rice, refried beans, and shredded cheese.
Make another layer of chips, meat, rice, beans and cheese.

Bake at 350 for 10 minutes or until cheese melts.

Serve with your fav toppings. I personally only like green onions. But my husband likes sour cream, salsa and guac.

Both cards have flexibility in paying and 0% interest, who wouldn't want that? My recipe is from my mother's family and her culture which is Tonga. This is something they eat there with different variety of meats. It is called Lu - meaning leaves or greens and pulu- is meat. Lupulu is a simple dish. I make it for my husband and he LOVES it, and he's not Tongan!

Lupulu:
1 onion, diced
1 can (12 oz.) corned beef (you can mash it with a fork)
5 Tablespoons Mayo (Best Foods is yummy!)
3 bunches of fresh spinach, washed, stemmed and drained

2- 20 inch sheets of aluminum foil
Preheat the oven to 350º. Place foil on top of one another to form a "t". Place Spinach leaves on top, next layer the top of the spinach with corned beef, then the onion, and dashes of salt and pepper. Top off the layers with the mayonnaise. Wrap the first layer of foil carefully, then wrap the next layer on top. Bake on a baking sheet in a 350º oven for 1 hour. Remove and allow it to cool for at least 10 minutes. Carefully open the package and stir the lupulu, serve with steamed rice or potatoes. We also eat it with kumala and sweet potatoes. So yummy!! (Thanks AT for the extra help!)

Can't beat 0%APR AND No annual fees! Especially for someone young like me!

Anyway, this is a recipe which I make for my dorm floor every two weeks! They are Chicken Empanadas which you can freeze and cook later - perfect for late night study sessions with the girls :)

Ingredients:
5lbs Boneless Chicken Tenders (Breasts will also work)
1 pack of pre-shredded Pepperjack Cheese
8oz Cream Cheese
1 Jalepeno (Or more if you like it spicy!)
1 tablespoon Ground Cumin
1 Package of Puff Pastry Sheets

First, cook the chicken in a pan, salt and pepper to liking. After you finish cooking the chicken, set it aside on a cutting board to cool. In the meantime, chop jalepeno into small cubes. In a large bowl, mix pepperjack, cream cheese, cumin and jalepenos until the mixture is evened out. Now, back to the chicken, you can either cut it up into little cubes, or shred it using two forks. I prefer shredding as it feels more authentic! After you've finished, throw that into the mixture as well and mix it all up. Roll out your puff pastry sheets and cut out 3inch circles, or squares. Dollop a heaping spoonful of the chicken/cheese mixture into the center of your puff pastry, and seal it with water, creating the empanada. Using a fork, press it into the edges of the empanada to seal even more so, and for aesthetic affects.
Now, you can either put the empanadas in the freezer, or into the oven at 400 degrees for 15-20 minutes, depending on your oven.

Chicken lasagna

1 pack of no boil lasagna noodles
4 chicken breast shredded (boil or bake)
2 jars of sphaghetti sauce
1 pack shredded cheese (any variety)
1 pack of frozen chopped spinach - drained

Season spaghetti sauce to your taste

Mix 1 jar of spaghetti sauce and shredded chicken together. Spray bottom of glass or aluminum pan with cooking spray.
Put small amount of spaghetti sauce on bottom of pan. Next place no boil noodles on top of sauce. put chicken mixture on top of noodles, then chopped spinach, then cheese. put another layer of noodles on top. pour sphaghetti sauce on top. cover with foil and bake for 45 minutes on 350.
And viola you have dinner

Easy Shrimp and Fettucine with garlic butter sauce

Fresh jumbo shrimp or prawns (love the ones at costco in the fresh seafood dept)
butter to saute and butter for sauce on the fettucine
olive oil
fettucine (can use whole wheat or whole grain to be healthier)
fresh garlic
fresh tomatoes (love the roma the best)

boil fettucine, when just about down start sauting shrimp in a saute pan, drain noodles and set aside, saute shrimp until pink but not to long and remember to saute on all sides of the shrimp
in another separate huge saute pain melt 1 1/2 cubes of butter (salted or unsalted, I prefer the salted) and also 3/4 cup or so of top notch extra virgin olive oil, when butter is melted put in fresh garlic and let saute for a little while, towards the end throw in fresch cut up tomatoes for about 20-30 seconds and mix all ingredients together.
This is all done by taste and not measurements or exact times on everything but it is delish

I'm a wife that has a hungry husband and family! So, I would really enjoy using the American Express card every time I go to the grocery store..which is quite often! The American Express Blue Cash card is really wonderful- and I enjoyed really about all the benefits that American express offers! I love the 90 day protection policy- that is comforting for customers!

A recipe I use often in my home is ethnic, delicious, and easy to make! It's an Indian dish called, "Chicken Jalfrezi"

2 heads of garlic
1 large onion
4 chicken breasts
1 Red bell pepper
1 Can of tomatoes
Spices Include:
3 T Tumeric
3 T Cumin
1 T Chili powder
2 T Coriander
Fresh herb:
Handful of fresh cilantro

Heat in oil the onions and garlic for five minutes. Cut up chicken up small, and add into onion and garlic mix-brown. Next, add the can of tomatoes and spices. Also add the pepper. Let this sit, simmering, covered for 20 minutes. When done, add fresh cilantro on top! Serve with bowl of rice or the Indian bread, "Naan"

1/2 cup apple butter
1/4 cup brown sugar

Directions:
1. Preheat the oven to 350 degrees F.
2. Place Pork tenderloins in a 9x13 baking dish or small roasting pan.
3. Pour apple juice over the pork, and cover the dish
4. Bake for 1 hour in the preheated oven.
5. Mix together the apple butter, brown sugar, cinnamon and cloves.
you may need a little water.
6. After the hour, remove pork loins from the oven, and spread the apple butter mixture over them.
7. Cover, and return to the oven until fork tender. Depending on thickness 1 to 2 hrs.

Bean Dip
2 cans refried beans
1 can Rotel "Hot" tomatoes
1 onion chopped fine
2 cups shredded cheese
2 jalapeno peppers chopped
bunch chopped cilantro
Mix all of the above and put into an ovenproof dish, top with shredded cheese and bake for 45 minutes at 350. Serve hot with tortilla chips.

Easy Healthy Pasta

Whole Grain Noodles (your choice)
1Pkg Frozen Stir Fry Vegetables (we like the kind that includes squash and asparagus)
1 Med Size Can Diced Tomatoes
Black Olives
Feta Cheese
Olive Oil

1 Pkg Pork Sausage Links (optional) Not a necessary ingredient

1. Cook noodles per directions
2, Cook vegetables per directions
3. In a large pan, mix vegetable with diced tomatoes and heat
4. To serve, pour vegetable and tomatoes over pasta and toss with a small amount of olive oil. Sprinkle black olives and feta cheese on top. If you are using sausage, sprinkle that on top as well.

We have a veggie eater in the house and often choose to make this recipe without the sausage. It is delicious either way and so easy! Enjoy

Here's mine:
Chipotle-Lime Grilled Chicken

Marinate 4 chicken breasts overnight in:
1 3/4 cup vinegar
1 cup olive oil
2 tbsp. lime juice
1/4 cup tequila
2 tsp. dried chipotle spice

Then toss them on the grill and grill until they're done. They're fine on their own, or you can chop or shred them up for use on taco salads.

Crescent Chicken

1 Chicken, deboned, chopped into small pieces
1 Can Cream of Chicken Soup
1 Can Cream of Celery Soup
1 C Milk
Mix Soups and Milk together and heat
2 Cans Crescent Rolls
1 C Cheddar Cheese
Separate rolls and place 1 tablespoon of diced chicken and 1 tablespoon of cheddar cheese inside and roll up. Place rolls in a baking dish and pour soup mixture on top. Bake 350, until golden brown, about 20 minutes.

1 Pkg Chili Seasoning
1 Can Sliced Olives

Place everything together in a pot, heat to boiling and simmer for 20 minutes. This recipe has many variations and you can add meat, cheese or onions if you choose. I often place this recipe in my slow cooker on low. Enjoy

Mushroom Plum Chicken Skewers
1 pound skinless, boneless chicken breast halves, cut into 1-inch cubes
16 button mushrooms
8 green onions, cut into 1 1/2-inch pieces
4 firm, ripe plums or 3 peaches, cut into wedges
1/4 cupbalsamic vinegar
2 tablespoonscanola oil

On 8 12-inch metal or bamboo skewers, alternately thread chicken, mushrooms, green onions and plums.

In a small bowl stir together vinegar and oil; brush on kabobs.

For a charcoal grill, place skewers on the rack of an uncovered grill directly over medium coals for 12 to 15 minutes or until chicken is cooked through, with no pink remaining, turning once halfway through grilling time. (For a gas grill, preheat grill. Reduce heat to medium. Place skewers on a grill rack over heat. Cover and grill as above.)

This recipe is super versatile - it is awesome as is and can be served with whatever sides and veggies you like (it's great with a roasted broccoli).

Marinated Flank Steak

½ cup bottled teriyaki sauce
1/4 cup soy sauce
4 cloves garlic, chopped
2 pounds flank steak
1/4 cup spicy brown mustard

In a baking dish, combine the teriyaki sauce, soy sauce and garlic. Make 1/4-inch-deep cuts about 1/2 inch apart on both sides of the steak, cutting diagonally across the grain. Rub both sides with the mustard and place the steak in the marinade. Refrigerate for up to 3 hours, turning occasionally. Preheat the broiler and line a shallow pan with foil. Broil for 6 minutes on each side for medium-rare, basting once on each side with remaining marinade. Let rest before slicing across the grain.

Zucchini or summer squash "spaghetti"

3 -4 tablespoons extra-virgin olive oil
4 garlic cloves, thinly sliced
3 lbs zucchini, cut into long thin strips (or other summer squash) (mandolin is great for this step)
1/2 teaspoon salt

(optional prep step: after zucchini is sliced, salt it and put it in a strainer, with or without some weight on top, to allow some of the water to be pulled out of it - wait an hour or so and then follow recipe - I do this about half the time, I think it's usually not too necessary)

Heat a large skillet or roasting pan over medium heat. Add the olive oil and heat until the oil shimmers. Add the garlic and cook until light golden, about 3 minutes. Add the zucchini and cook for 2 minutes without turning. Add salt and cook another 3 minutes, stirring.
occasionally, until barely tender. Use as you would spaghetti - top with pasta sauce or whatever else you like. If you cook it longer, it will lose the crispness which is nice too, it gets creamy and mushy.

Eggplant "Pizza"

1 large sized eggplant
1 cup shredded mozzarella
1/2 cup shredded cheddar
1 cup tomato sauce or marinara/pasta sauce
1 tsp basil
1 tsp oregano

Slice the eggplant lengthwise, making probably 6-8 slices about ½ inch thick. Place on a greased cookie sheet and place under a broiler (or use toaster oven and place on foil instead of greased cookie sheet). Broil until light brown. Remove, flip and cover with tomato sauce, basil, oregano and mozzarella and cheddar cheeses. Place back under the broiler. (Add any additional "pizza" toppings here – peppers, onions, pepperoni, diced ham, whatever you like)

You can use other proteins with this basic recipe, and you probably could pair it nicely with the zucchini spaghetti, although I haven't done that.

Crackle Chicken

Boneless/skinless chicken breasts or tenders (if planning to use in a salad, you may slice up now and do each slice individually, but I usually do not)
Egg (both white and yolk mixed together lightly)
Crushed Pork Crackling or Pork Rinds, crumbs are okay
Fresh ground black pepper
for chicken parm type dish, top with pasta sauce and cheese of choice

1. Lightly paint chicken with egg mixture
2. Cover chicken with crackling crumbs (you are using the egg like a glue so these will stay). Lightly sprinkle with pepper or any other seasonings you like.
2a. I usually do both sides, and I do the first side completely before turning it over and doing the other, but if it's too messy you can do only the one side.
3. Bake in the oven at 350 degrees for about 30 minutes or until cooked.
4. If you want to add additional seasonings, you can do so before or after baking - I like to add Penzey's Mural of Flavor seasoning or sometimes just garlic and oregano before baking - be careful with the salt though, as the crackles have salt in them.
5. Eat as they are, or put on top of a fresh salad. To make into a chicken parm type taste, top with a little pasta sauce and a sprinkle of cheese.

Crockpot Easy Beef Stew
Ingredients
4 medium red potatoes
1-1/2 lbs. beef stew meat
1/3 cup flour
salt and pepper to taste
14 oz. can diced tomatoes, undrained
3 cups frozen stir fry bell peppers and onions
2 cups water (not really an ingredient)
Preparation
Scrub potatoes and cut each into quarters. Place in bottom of 4 quart slow cooker. Mix flour, salt and pepper and toss with beef to coat. Add to crockpot. Add undrained tomatoes and water and stir.
Cover crockpot and cook on low for 7-8 hours until beef and potatoes are tender. Add stir fry vegetables. Cover and cook on low for 30-40 minutes until vegetables are hot and tender. 4-6 servings

Ingredients:
1 cup light sour cream
1 Tbsp. flour
1 envelope chicken gravy mix (about 1 oz.) or 1 Tbsp. homemade gravy mix
1 cup water
1 pound boneless, skinless chicken breasts
1 lb. bag frozen mixed vegetables, thawed
Preparation:
In a 3-4 quart slow cooker, mix sour cream, flour, gravy mix and water and stir with wire whisk until well blended. Cut chicken breasts into 1" pieces and add to slow cooker. Stir in vegetables and cover crockpot.
Cook on low for 4 hours until chicken is tender. Turn heat to high setting and cook for 1 hour longer until sauce is thickened and chicken is thoroughly cooked. 4 servings

recipe #3 Raspberry Glazed Chicken
(Good for this time of year when raspberries are in season and nicely priced. Can also be done with peach preserves and sliced peaches, or strawberry jam and sliced strawberries)
Ingredients:
1/2 cup raspberry jam
2 tablespoons Dijon mustard
2 tablespoons honey
white pepper and salt to taste
6 boneless, skinless chicken breasts
1-1/2 cups fresh raspberries
Preparation:
Prepare grill. Brush rack with vegetable oil. Mix raspberry jam, mustard, honey, pepper, and salt. Place chicken on grill, cover and cook for 8-9 minutes per side, brushing frequently with the jam mixture, until juices run clear and center of chicken is no longer pink when thickest pieces are cut. Discard remaining jam mixture and serve chicken topped with raspberries.

Here is my recipe for Italian Beef Sandwiches:

1 3-4 lb beef roast
1 packet Italian dressing mix
1 jar pepperocini peppers
1 sliced onion
rolls

Directions:
Combine 1st 4 ingredients in the crock pot. Include the liquid in the jar of peppers. Cook for 6-8 hours on low. Then shred the meat with a fork and return to the crockpot for another hour or so. The longer it cooks the spicier it will be! Serve on rolls.

I love that the new American Express Blue Cash Everyday Card has no annual fee!

We always have lots of extra eggs at our house (we have too many friends with chickens!) so we needed to come up with a new savory way to make eggs into a meal and this is my recipe:

A New Kind of Loaded Baked Potato

4 baked potatoes (I like using sweet potatoes!)
4 Tbsp butter
8 eggs
2 Chicken Apple sausages
1 C Cheddar Cheese
2-3 scallions (chopped)

Cook the sauages and cut into bite sized chunks.

Cut each potato in half lengthwise. Hollow out each half leaving a fairly thick bowl (~1/4" thick). Place 1/2T of butter into the bottom of each bowl.

Crack an egg into each potato half (be sure to not break the yolk). Evenly disperse sausage pieces and cheese between the 8 halves. Top with chopped scallions.

Bake at 350 degrees until egg is set. Serve hot.

With a salad of mixed greens on the side these make an awesome dinner!

Breakfast Banana Pudding

3/4 C Quinoa
1 1/2C water
2 C vanilla soymilk
2 ripe bananas
1 T vanilla extract
2 T brown sugar

Rinse quinoa (this keeps it from being bitter). Bring water and quinoa to a boil over medium heat, stirring as needed. Reduce heat to low, cover and simmer for 15 minutes. Remove from heat.

In the meantime, place all other ingredients in the blender and blend until smooth. Add mixture to quinoa and return to heat. Cook until the mixture becomes thick and creamy (sort of like cream of wheat), about 10 minutes. Serve immediately!

(I like to garnish with ground cinnamon, but what would make this 7 ingredients :P)

During the summer, I DO NOT like to turn on my oven so my dish is a great wrap that can be eaten for lunch OR for dinner!

Ingredients

4 tablespoon creamy ceasar dressing (low fat if you need a healthier option)

4 Large Tortillas

12 leaves romaine lettuce

12 Ounces of Turkey (or enough to fill you up!!)

1 (7-ounce) jar roasted red peppers, drained and chopped (or fresh chopped if you would like)

1/2 cup parmesan cheese, grated

Spread 1 tablespoon ceasar dressing over entire surface of one side of each of the tortillas. Place 3 romaine lettuce leaves on each tortilla, pressing them into the dressing. Add turkey to tortillas and 1 tablespoon roasted red peppers. Sprinkle with 1/2 cup parmesan cheese, grated, evenly over tortillas. Tightly roll up, starting with the turkey side. Refrigerate 1 hour or longer.

Serve with chips, carrots, fruit, and cold beverage!

Most people I know here in Texas have never had (or even heard of) beef stroganoff, which is a shame, because it is one of the tastiest Russian dishes ever! My family’s old stroganoff recipe is a major favorite in my household. It’s easy AND delicious! Enjoy!

Beef Stroganoff:
2 lbs. cubed steak
2 lbs. hamburger
2 cans mushroom soup
2 cans chicken soup
1 cup flour
8 fluid oz. red cooking wine

Directions:
Combine cubed steak & hamburger (drain if necessary) and brown in a large pot . Add flour to the meat. Cover the pot and cook at a low temp for 15 mins. Add the soup and wine next. If it seems to thicken up too much, add a bit more wine. Let simmer for 1 hour.
Tip: It’s not mandatory, but sometimes I will add sour cream to richen the flavor.

This dish is fantastic over rice, potatoes, noodles, or even alone!

* 1 tablespoon minced fresh parsley
* 2 (6 ounce) fillets cod

* Refrigerated butter-flavored spray*

Directions

1. In a shallow bowl, combine the crushed croutons and parsley. Brush cod with salad dressing, then coat with crumb mixture. Spritz with butter-flavored spray. Place in an 11-in. x 7-in. x 2-in. baking dish coated with nonstick cooking spray. Bake, uncovered, at 400 degrees F for 10-15 minutes or until fish flakes easily with a fork.

Meat Loaves
Makes 6 servings
Prep. Time: 15 minutes
Cooking/Baking Time: 30 minutes
1 lb. extra-lean ground beef
6-oz. pkg. stuffing mix
1 cup water
1 tsp. Italian seasoning
3/4 cup spaghetti sauce
3/4 cup shredded mozzarella cheese
1. Mix meat, stuffing mix, water, and seasoning in a large mixing bowl until well blended.
2. Divide the mixture into 4 equal pieces. Then divide each of those pieces into 3 more pieces so that you have a total of 12. Roll each piece into a ball. Flatten and fit each into one of 12 muffin cups sprayed with cooking spray. Make an indentation in the center of each with a spoon.
3. Spoon spaghetti sauce into center of each mini meat loaf.
4. Bake at 375° for 20 minutes, or until meat loaves are cooked through.
5. Top each with cheese. Continue baking for 5 more minutes, or until cheese is melted.

What you need:
1 Family size bag of Dorito Chips
1 Pound of hamburger meat(you can also use chicken)
1 Can of Rotel
1 Can Cream of Chicken

Brown Hamburger Meat...

Cut Velveeta cheese in cubes

Combine Rotel, Cream of Chicken, and Velveeta in Large Saucepan Until Melted..

Crush Doritos and Layer them in bottom of Casserole dish...

Put a layer of hamburger meat over the chips...

Then a layer of your cheese sauce that you have melted...

Repeat these 3 steps until your dish is almost full....

Top with chips and cheese

Bake @ 400 Degrees for 10-15 Min

CHICKEN SPECTACULAR:

1 lb of chicken cooked & shredded
1 can of water chestnuts
1 pkg of uncle ben's wild rice
1 french style green beans
1 pkg. of shredded mild cheese
1 can of pimentos

Boil chicken and shred. Cook rice according to pkg directions. Place chicken in casserole dish. Add green beans, pimentos, water chestnuts, rice. Cover with cheese! Bake 350 for 30 minutes and ENJOY!!! :)

Creamy Cheesy Noodle Casserole

1/2 c. onion, diced (optional)
1 lb. ground beef, turkey, pork, etc.
1 can cream of mushroom soup
1 can tomato soup

8 oz. egg noodles

Brown onion and ground meat. Cook and drain noodles. Mix everything but cheese. Top with cheese and bake at 350 degrees for one hour.

Slow Cooker Barbequed Ribs

3 lbs. spare ribs (thick country ribs work well)
Salt and pepper
Sliced onions
16 oz. bottle smokey BBQ sauce

Sprinkle ribs with salt and pepper. Put in broiling pan and broil for 30 minutes to brown and remove excess fat. Put onions in slow cooker and add sliced ribs (cut into serving pieces). Pour sauce over. Cover. Cook on low for 7-9 hours or until finished.

Here is my recipe:

1 Pound Ground Beef
½ Cup Bread Crumbs
1 egg
1 teaspoon salt
1 Cup Grape Jelly
12 ounces (1 bottle) Chili Sauce

Pre-heat your oven to 400 degrees. Pour in the Chili Sauce and Grape Jelly Turn into a crockpot and set to high and let it heat. While the sauce is heating in the crockpot get a large bowl and mix the Ground Beef, Bread Crumbs, Salt, and Egg until evenly mixed throughout. Using the mixture form 25-30 small meatballs and lay them out equally on a cooking sheet. Put the meatballs into the oven and let cook for 10-15 minutes. Gently stir the mixture on the crockpot to help it mix evenly. Remove the meatballs from the oven and add to mixture in crockpot. Change crockpot setting to low and let cook for 3-5 hours. Serves 4

An alternative is to cook the meatballs the night before and put them in the freezer. In the morning make the sauce in the crockpot and let heat on high for 20 minutes and add frozen meatballs. Change setting to low and cook for 6-8 hours.

BBQ Chicken Pizza

Spread an already baked pizza crust (such as Boboli) with your favorite bbq sauce... just a thin layer.

Dice cooked chicken and add a little bbq sauce to it. Add to sauced crust.

Add favorite pizza herbs. Sprinkle with garlic powder.

Add shredded pizza cheese and bake following crust directions.

Slow Cooker Lasagna

12-14 oz lasagna, cooked & broken into pieces
1 lb ground beef
1 small onion, diced
32 oz jar spaghetti sauce
1 can cheddar cheese soup
16 oz mozzarella cheese

Brown ground beef and onion. Drain. In separate pan, simmer spaghetti sauce, then add beef mixture. Mix cooked lasagna pieces with cheese soup. In slow cooker, mix sauce, lasagna, and mozzarella. Cook on low for 4-5 hours.

Ingredients:

8 boneless chicken breast halves without skin
8 strips bacon
1 cup sour cream
1 can (10 3/4 ounces) condensed cream of mushroom soup
1 jar dried beef

Preparation:
Wrap 1 strip of bacon around rolled half of chicken breast; repeat with remaining halves. Line a large casserole/baking dish with the cut up chipped beef. Place the 8 chicken breast halves on the chipped beef. Combine sour cream and soup; pour over the chicken. Bake slowly, at 300° for 2 hours, or until chicken is cooked and bacon is crispy.
Serves 8.

Smoked Sausage Mix

Ingredients:
2lbs Smoked Sausage (slice)
1 Bell Pepper (chopped)
2 cans of sliced potatoes
2 cans of mixed vegetables
1 chopped onion
Sprinkle some Cayenne pepper to taste

Preparation:
Cook on stove top start temperature at med/high add smoked sausage, mixed veggies, potatoes, onion, bell pepper, cayenne pepper and stir. Let cook for about 10-12 minutes stirring occasionally. turn down to simmer for about 5 minutes and serve!

This is a huge hit with my family and friends and so simple!

i like the no annual fee.
my recipe is very simple
brown a rump roast on all sides in a little oil with plenty of salt and pepper remove from pan and brown a diced onion. add back to pan along with enough water to bring level up to 1/2 of the pot. simmer on low for a few hours turning roast every 30 minutes. when roast is done remove from pot to rest and cool a bit. to make gravy add a couple tbsp cornstarch to a cup of water and stir into boiling pan juices. slice roast thinly and serve with gravy. yum

Stove Top Stuffing

Mix sour cream, cream of Brocolli & Mushroom soup. Put a layer of Cooked boneless chicken on the bottom of dish, add brocolli, cover with cream mix and put cooked stove top on top. Back at 300 for 40 mins!

This is something I just threw all into the crock pot and served over Rice. It was a hit and great way to use veggies from our Garden!

6 skinless, boneless chicken breasts 6 slices Swiss cheese 1 (10.75 ounce) can condensed cream of chicken soup 1/4 cupmilk 2 Cups herb-seasoning stuffing mix and 1/4 cup butter
DIRECTIONS

Meat in a Loaf

1 lb ground beef
1 loaf French bread
1/4 C. salsa
1 small onion, chopped
8 oz shredded cheddar cheese
4 slices American cheese

Preheat oven to 300. Brown meat and onion in skillet. Cut ends off bread; hollow the inside out. Crumble the removed bread into meat mixture. Blend to absorb liquid; stir in salsa and 3/4 shredded cheese. Stuff mixture into hollowed bread; secure ends with toothpicks. Cover bread with sliced cheese and shredded cheese. Here's an awesome recipe for a vegetarian pot pie, yumm!

Ingredients
• 1 (10.75 ounce) can condensed cream of potato soup
• 1 (15 ounce) can mixed vegetables, drained
• 1/2 cup milk
• 1/2 teaspoon dried thyme
• 1/2 teaspoon ground black pepper
• 2 (9 inch) frozen prepared pie crusts, thawed
Directions
1. Preheat oven to 375 degrees F (190 degrees C).
2. In a medium bowl, combine potato soup, mixed vegetables, milk, thyme, and black pepper.
3. Spoon filling into bottom pie crust. Cover with top crust, and crimp edges to seal. Slit top crust.
4. Bake for 40 minutes. Remove from oven, and cool for 10 minutes before serving.

Shepherd's Pie:

1 pound ground beef, browned and drained.
1/2 onion diced
1 can Baby Carrots, drained
1 can English Peas, drained
1 jar brown gravy
1 package Mash Potatoes

Pre-heat oven to 350F.

Brown ground beef with onion. Drain excess fat.
Place ALL ingredients except gravy and potatoes into casserole dish.
Pour 1/2 jar of gravy into casserole an mix well. Place covered into oven for 10 minutes.

Prepare mashed potatoes according to package directions. Remove casserole from over and spread potatoes on top. Return, uncovered, to oven and bake for 15 - 20 minutes.

Before serving, pour remainder of gravy on top of casserole.

Serves 4.

1 In a skillet, brown meat and onions over medium heat; drain.

5 Firmly press perforations and edges to seal, and pat to form 15x13" rectangle.

My recipe is for crockpot beef/pork bbq (your preference)

1 roast of beef/pork
2-3 bottles of bbq sauce
1 package of hamburger rolls

Placed meat in crock on low for 8-10 hrs high on 6-8 hrs with a little bit of water and bq sauce. Once meat is tender and falling apart take meat out and shred with a knife and fork drain fat with saving just a tiny bit to add to shredded meat mixture... place meat back in crock with remainder of bbq sauce and just a little bit of dripppings form the cooked meat continue to cook on high/low for 20-30 mins till flavors are blended..... So tender and moist

Chicken Burritos

4 boneless chicken breasts
10 Flour tortillas
Taco season packet
12 oz can of Green chili sauce
Asadero cheese
Heavy whipping cream
1. Boil the chicken breasts until cooked thoroughly
2. Shred chicken and place into a pot. Pour in the seasoning and following the directions on the packet.
3. Once the chicken has absorbed the seasoning, put a portion of the chicken in each tortilla. Roll the filled tortillas up and place into a 13 x 9 pan.
4. Pour the green chili sauce into a small pot and whisk in about a 1/4 cup of whipping cream. Cook until sauce is warmed thoroughly.
5. Spoon a small amount of the green chili sauce onto each burrito (just enough to moisten each burrito)
5. Sprinkle shredded asadero cheese on top of the burritos.
6. Bake in 350 degree oven until the cheese is melted.

1 envelope onion soup mix
1 Tbs. Worcestershire sauce

Put everything in the crockpot in the morning. Set it on low and eat when you are ready for dinner! I get rave reviews, even with company!

My recipe is simple and everyone loves it because it's home cooking at its simplest (and finest)

Perfect pot roast

Start with a roast that is the right size for your family. A chuck or bottom round roast is perfect for this meal. Surround it with chunks of red potato, baby carrots, fresh green beans and chunks of red onions.

Cover the meat with a mixture of 2 cans of cream of whatever soup and 1 envelope onion soup mix.

Cover with foil and bake at 350 degrees for at least 1 1/2 hours (longer for larger roasts) .

Can be made in Crockpot on low for 6-8 hours.

Light & Easy Chinese Chicken Salad

1 bag coleslaw mix
2 cooked boneless, skinless chicken breasts (made w/no skin), shredded, diced or chopped
1/2 cup dried cranberries
1/3 cup roasted sunflower seeds
1/3 cup slivered almonds
1 cup Asian Toasted Sesame reduced fat dressing (I used Kraft - approximately 1/2 bottle, use more or less to taste)

Mix everything together, cover and refrigerate at least an hour to give the flavors a chance to mingle and get to know each other.

Every ingredient in this delightful dish is crucial so use the best quality that you can find/afford and make sure the tomatoes are in season in your area- if I still lived up north I would have to wait at least another month.

Organic baby spinach
Organic baby arugula
Fresh tomatoes, sliced
Fresh mozzarella sheets rolled with proscuitto and basil, sliced
Fresh basil, julienned
Extra virgin olive oil (evoo)- dipping quality
Coarse salt and freshly grated black pepper.

Lay your spinach on a plate and top with some spicy arugula. (We wash and pick through and de-stem our greens even though they are supposedly ready to eat.)

Alternate slices of tomato with the rolled mozzarella in a pattern that pleases you. Drizzle with evoo (you can substitute a lovely aged balsamic vinegar with this dish) and sprinkle with salt- we used sea salt but kosher or any coarse salt will do and freshly grated black pepper.


Cover loosely and let set (can refrigerate or not) at least 1 hour. We have had this without letting it sit and it is delicious but it takes it to another dimension if you give the flavors time to marry.


Hope you enjoy this refreshing taste of summer as much as we do.

Ravioli Lasagna

Another one so easy but so so tasty- we were trying to figure out what to have, knew we wanted pasta but didn't want just spaghetti, felt like lasagna but didn't want to wait, so here's what we made- I'm sure there are other versions, but ours is simple and delicious and looks like a work of art when it's done.

We fight over the crispy perfectly browned cheese- do you do that at your house?

P.S. This makes a TON- we made one to keep, Ki took one to a friend and we had enough for to put a meal in the freezer. Feel free to cut down the recipe or freeze for a busy night.

2 bags frozen cheese filled ravioli
4 or 5 cups worth of your fave marina (meatless) spaghetti sauce - we used homemade, but a couple of jars would be fine.
1 large container ricotta cheese
2 eggs
Grated mozzarella
Fresh grated Parmesan
Fresh sliced mozzarella

You can make this without defrosting or boiling the ravioli as long as you can separate them (just bake longer) but we were in a hurry so boiled first- either way will be fine.

Mix ricotta with 2 eggs and a generous handful of fresh grated Parmesan and a couple of handfuls of grated mozzarella. We season our sauce really well, if yours is on the bland side add your favorite Italian style seasonings (Mrs. Dash makes a good one) to the cheese mixture.

Coat the bottom of 2 9x13 baking dishes with sauce. Add a layer of ravioli noodles to each. Top with sauce. Spread cheese layer on top, distributing half evenly between both dishes. Another layer of noodles, then sauce then spread remainder of cheese mixture. Top with final layer of noodles, plenty of sauce and then cover with thin slices of fresh mozzarella and sprinkle with more fresh grated Parmesan.

Bake in a 375 degree oven for about 25-30 minutes or until it's all hot and bubbly and browned nicely. (You can broil for a couple of minutes to get that lovely browned cheese if you like.)

If you are starting with frozen or uncooked raviolis, add at least 30 minutes to the time.

Enjoy.

P.S. If you overstuff your casserole like we did put one of your crappy cookie sheets underneath or you will end up with a horrible mess to clean.

1 (12 ounce) package jumbo pasta shells, cooked and drained.
4 cups shredded mozzarella cheese.
1 (15 ounce) container ricotta cheese.
1 (10 ounce) package frozen chopped spinach, thawed and drained.
1 (28 ounce) jar spaghetti sauce.

Cook pasta shells according to directions on package.
Mix 3 cups of mozzarella cheese, ricotta cheese, and spinach together. Stuff into shells.
Pour spaghetti sauce over shells.
Sprinkle remaining 1 cup of mozzarella cheese over top of shells.
Cover and bake in a 350 degree oven for 30 minutes or until cheese is melted.

1 medium onion, chopped.
1 (16 ounce) bag of frozen stir fry vegetables. These can be whatever type you like.
2 tablespoons soy sauce.
2 cups cooked white rice.

Heat oil in pan until hot. Add garlic and onion and cook for 2 minutes.
Add vegetables and cook for about 5 minutes.
Add soy sauce and cook for 1 minute more.
Server over cooked rice.

Savory Blue Cheese Flank Steak with Grape Tomatoes:

1/3 cup olive oil (steak), 2 tbsp olive oil (tomatoes)
1/3 cup soy sauce
2 lbs flank steak
1/2 cup grape tomatoes
1/4 cup crumbled blue cheese
salt/pepper

-Combine the olive oil, soy sauce and a teaspoon of pepper together and marinate the flank steak in mixture overnight.
-Remove the steak from the marinade bag and coat with a generous layer of kosher salt and ground pepper.
-Grill approximately 5 minutes on each side cooked to medium rare.
-Remove the steak from the grill, cover with foil, and let rest for 8-9 minutes before slicing it into thin slices.
-Sprinkle grape tomatoes with kosher salt and ground pepper and cook in a medium sized sauce pan over medium heat 2-3 minutes.
-Crumble fresh blue cheese onto the slices of flank steak, add grape tomatoes to top of finished steak and enjoy the burst of flavors!

1 (9-inch) unbaked pie crust.
3 tbsp. butter.
1 medium onion, chopped.
1 (16 ounce) bag frozen mixed vegetables. These can be whatever you like.
5 eggs.
8 ounce bag shredded Cheddar cheese.

Prick pie crust well with a fork. Bake in a preheated oven at 450 degrees for 8 minutes. Let cool.
Lower oven temperature to 325 degrees.
Saute onion in butter until soft. Add mixed vegetables and cook for 4 minutes or until no longer frozen.
Beat eggs in a bowl until frothy. Add vegetables and cheese. Pour mixture into crust.
Bake for 40 minutes until center is firm. Let stand for 10 minutes before serving.

White Rice
Chicken Tenderloin Strips
1 C. Chicken Broth
1/2 c. Green Pepper Strips
1/4 c. Toasted Cashews (you toast them in a pan yourself)
Dash of Hot Sauce

Brown Chicken Tenderloins on each side and add chicken broth to pan. Simmer 1/2 hour or until tender. Add crispy-cooked green pepper strips, toasted cashews, and dash of hot pepper sauce. Simmer a few minutes.
Place over a bed of prepared white rice and serve hot.

POT ROAST

MARINADE:

1 c. A-1 sauce
1 c. Worcestershire sauce
1/2 c. strong, hot, black coffee (not decafinated)
1/4 tsp. coarse ground black pepper
4 beef bouillon cubes

Combine ingredients. Melt beef bouillon cubes in coffee before adding to other ingredients. Allow roast to marinade a minimum of three hours, overnight if a less-expensive cut of meat.

POT ROAST:

Quantities given below are per person to be served. 2 potatoes, peeled and quartered 1/2 yellow onion, peeled and quartered 2 carrots, peeled and cut into large chunks 1 stalk celery, cut into lg. chunks 1/2 clove garlic, peeled and quartered 1/4 c. water
Heat 2 tablespoons vegetable oil in frying pan. Brown roast on all sides. Add oil and any "browning" to marinade.

Layer ingredients in roasting pan in following order: carrots, potatoes, celery, onions, and roast. Pour marinade and water over vegetables. Cover and bake in oven at 350 degrees until carrots are tender. Remove meat and vegetables from liquid remaining in pan.


GRAVY:

Ratio is for every two cups liquid remaining in roaster. If there is less than two cups, add water to make up difference. If you detest lumps in your gravy, strain liquid. Pour liquid into saucepan. Bring to a boil. In a separate container, mix 1 tablespoon flour to 1/2 cup cold water, stirring until no lumps are left. Once roast liquid is boiling, slowly add flour water, stirring continuously. Lower heat and continue stirring until gravy comes to desired consistency. Pour over meat and vegetables and enjoy!

cook chicken and brown, follow rice directions on the box (i use 5 minute rice, hehe) after rice is done mix in the cream of chicken (i always set my chicken a side and pour the cream of chicken in the pan i cooked the chicken in to get all that flavor) put mixture of rice and cream of chicken in a oven safe dish and lay the cooked chicken on top and then spread the cream of mushroom all over and bake on a pre heated 375 for about a half hour.

In a 13x9 pan, combine saurkraut, apples, onion, water and brown sugar.

Thomas' multi-grain light english muffins
Fresh mozzarella (buffalo, if you like it)
Jarred marinara sauce (we like all the Newman varieties)
Fresh basil
Toast the English muffins lightly. Take them out of the toaster-oven and spread on a medium-thick layer of the marinara sauce. Cut the mozzarella into round slices, one for each open-faced "sandwich." If you like basil, tuck a piece under each piece of mozzarella. Then put in the toaster oven (or regular oven) until the cheese gets melty.

1 lb. hamburger
1 lg. onion
3 (10 oz.) cans enchilada sauce, add 1/2 can of water to these
2 lbs. shredded Mexican cheese blend
1 can of black olives, drained & sliced
12 corn tortillas

Salt & pepper to taste
1 tsp. cumin (I use a little less)
1 tsp. oregano
Dash of garlic

Brown meat with 1/2 of the onion, salt and pepper. Add cumin, oregano and garlic. Meanwhile, heat all 3 cans of enchilada sauce. Heat oil in a pan, enough to cover the tortillas. Fry tortillas in the oil, dip in the enchilada sauce and place them in a cake pan. Fill with meat, a little cheese and roll. Repeat for all remaining tortillas. Pour the remaining sauce over the enchiladas. Sprinkle the remaining cheese over them. Sprinkle olives over them. Bake at 250 to 300 degrees for 1 hour.

Pesto Spaghetti and Meatballs

1 lb. frozen cooked meatballs
12 oz. box of spaghetti pasta
2 Cups. frozen bell pepper and onion stir fry mixture
1 Tbsp. olive oil
1 cup of pesto
1 cup half and half

Bake meatballs as directed on package. Set aside. Cook spaghetti as directed on package. Drain and set aside.

Meanwhile, Heat up olive oil in a large skillet and cook bell pepper and onion stir fry for 8-10 minutes. Stir in meatballs, pasta, pesto and half and half. Cook over medium heat for a few minutes, stirring constantly, until mixture is hot. Serves 4 to 6.

Easy Beef Roast

2 lbs Beef Tenderloin
4 T Extra Virgin Olive Oil
½ cup Fresh Parsley
½ Cup grated Parmesan Cheese
1 ½ lbs Small Red Potatoes
1 Rosemary Sprig, finely chopped

Preheat oven to 400 degrees. Rub salt and pepper on both sides of beef. Heat oil in ovenproof skillet and brown beef on all sides. Transfer to oven and roast 18-20 minutes for medium-rare or until desired doneness. Cool 5 minutes, slice.

Meanwhile, boil potatoes in salted water until tender. Drain.

Plate the beef with the potatoes, gently push fork into potatoes to separate skin slightly. Drizzle meat and potatoes with pan juices and add a dash of salt and pepper. Sprinkle both beef and potatoes with rosemary and parsley.

Garlic Lime Chicken

6 – Skinless, boneless chicken breast – cut into 1” chunks
1 cup butter
2 medium garlic heads, diced
1 cup all-purpose flour
1 lime
1 T lemon pepper seasoning

Place chicken, flour and lemon pepper seasoning in a plastic bag and shake well.

Melt butter in a large skillet over medium heat, add garlic and sauté 3 to 4 minutes, until it starts to change color. Sauté chicken in garlic butter mixture for 10 to 15 minutes, or until juices run clear.

Squeeze lime over cooked chicken and add salt, pepper and lemon pepper seasoning to taste.

Combine chicken with dressing in a large skillet on medium high heat until evenly browned, about 4 min per side. Add broth and bring to a boil. Cover and simmer about 5 minutes. Add beans and cook another 5 minutes or until chicken is thoroughly cooked. Remove chicken from skillet; add rice and nuts; Cover; remove from heat and let stand about 5 minutes; fluff rice; serve with chicken.

My main recipe ingredients are:
Honey Soy Chicken
-1/2 cup soy sauce
-1 tablespoon honey
-1 tsp garlic powder and dried ginger
-1/2 cup chopped green onions..plus another 1/4 cup for topping
-1 package chicken breasts

Combine all ingredients in a ziploc and let chicken marinade for at least an hour (6-8 hours is best. Put it in the bag in the morning and its ready for dinner!).

Put chicken and marinade in a baking dish (I use a glass Pyrex) and bake at 350 for 30 minutes or until chicken is done, spooning liquid over the chicken as it cooks.

While chicken cooks, take 1 cup oil and heat on high. Take the 1/4 cup green onions and fry them quickly in the oil. Remove and put on a paper towel to drain.

1 lb beef stew meat
1 small bag of carrots
5 baking potatoes peeled and cubed
Put all in a crock pot. Cook on low overnight. Add salt and pepper to taste.
