Chicken Sausage & Summer Vegetables
Chicken Sausage & Summer Veggies

Ingredients:
2 Zucchini (chopped any way you like)
2 Yellow Summer Squash
1/2 Yellow Onion (slice into strips)
2 Red Peppers (slice into strips)
2 Chicken sausages (slice into rings - I used the preservative-free, all natural spinach and mushroom sausages from Target)
a splash of Extra Virgin Olive Oil



Directions:

Saute the onions in a splash of olive oil. Then add the squashes and peppers. Saute until they just turning soft. Then add the sausages (already pre-cooked) and heat until the sausages warm up and get a little caramelization.

Don't worry about spices in this recipe, since the sausages are already seasoned. You could easily make this vegetarian and it is also a primal recipe. And of course - it is simple and quick to make. If you happen to have leftovers, mix it with your eggs the next morning.  


It sounds so simple - because it is, but it's simply good.

3 cups of boiled pasta- I generally take farafal
2 cups of cut veggies- cut - zucchini, squash,broccoli, carrots, green pepper(choose any 3 or more)
olive oil -2 table spoons
Italian seasoning
salt to taste
pepper to taste


AT high flame, put olive oil in pan and add all the cut veggies. Saute them for about 4 minutes or so , add pasta, salt,pepper & seasoning. Cook that for about another 3-4 minutes at medium flame.

If you choose, you can garnish with cilantro and basil.

My Sunday evening dinner, twice a week lunch for kids ..I have been making this since last 3 years and still get compliments from my kids and DH!. I bet you will love it too.

Blue cash everyday card does not have any annual fee.I like that.

Apple Butter Pork Loin
2 (1 1/2 pound) pork tenderloins
2 cups apple juice
1/2 cup apple butter
1/4 cup brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
Directions:
1. Preheat the oven to 350 degrees F.
2. Place Pork tenderloins in a 9x13 baking dish or small roasting pan.
3. Pour apple juice over the pork, and cover the dish
4. Bake for 1 hour in the preheated oven.
5. Mix together the apple butter, brown sugar, cinnamon and cloves.
you may need a little water.
6. After the hour, remove pork loins from the oven, and spread the apple butter mixture over them.
7. Cover, and return to the oven until fork tender. Depending on thickness 1 to 2 hrs.

One thing I like about the Blue Cash Preferred Card is the cash back. My local bank card had Rewards but they just recently stopped them:( This one sounds really nice with that aspect
Now, for my recipe. It is really simple and they kids love it! Whether it is for lunch or dinner, they always ask for them.

Pizza Quesadilla's.

Tortilla's
Pizza Sauce
Shredded Mozzarella Cheese
Pepperoni
Parmesan Cheese

1.Take the tortilla and spoon pizza sauce on half the shell. Not a lot, about one spoonful.

2.Then layer the pepperoni on the half shell. Usually takes about 6 depending on which size shell you use.

3.Sprinkle mozzarella cheese on top of the pepperoni and then add parmesan cheese. Broil on LO for about 4 minutes or until cheese is melted. You can also microwave them but the cheese doesn't melt as well.

These make a delicious meal! We usually have them with some garlic bread. Nice and easy to make and cheap as well:)

Bacon Bowties

1. Bacon
2. Bowtie Pasta
3. 3 Cans of garlic tomatoes
4. Onion
5. 1 cup chicken stock

1. boil pasta in chicken stock until cooked
2. microwave bacon until cooked, cut into pieces
3. chop onion into small pieces and saute
4. mix sauteed onion, tomatoes, bacon and pasta in and simmer for 10 minutes

I like that you can earn cash back with the American Express Blue.

My favorite simple recipe:
1 lb. chicken
2 sticks butter
4 cloves garlic
Pasta (any kind will work)
3 strips bacon
Oregano

Boil the chicken and pull apart.
Chop garlic.
Heat butter in a skillet and cook on very low heat for about 5 or six minutes while pasta is boiling.
Add shredded chicken to butter/garlic mixture and cook for a couple more minutes (to warm up chicken)
Pour over pasta and top with crumbled bacon and oregano.

It's not very healthy, but it's delicious!

Broiled Sesame Cod
Ingredients:
1 1/2 pounds cod fillets
1 teaspoon butter, melted
1 teaspoon lemon juice
1 teaspoon dried tarragon
1 pinch ground black pepper
1 tablespoon sesame seeds
Directions

1. Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Line a broiler pan with aluminum foil.
2. Place the cod fillets on the foil, and brush with butter. Season with lemon juice, tarragon, and black pepper; sprinkle with sesame seeds.
3. Broil the fish in the preheated broiler until the flesh turns opaque and white, and the fish flakes easily, about 10 minutes.

It's easy, healthy, and good.

Easy "Lasagna"

1 bag frozen large size ravioli
1 pkg frozen spinach
2 jars pasta sauce
1 lb ground beef
4 cups mozzarella

Preheat oven to 350
Prepare ravioli according to directions.
Thaw and drain spinach.

Brown ground beef. Add jarred sauce to warm.

In lasagna pan (13x9 works fine)layer 1/3 meat sauce, 1/3 ravioli, 1/3 spinach, 1/3 cheese in that order.
Repeat for layers 2 and 3, ending with cheese on top.

Bake uncovered for 30-40 minutes, until barely browning and bubbling.

Shrimp & Sausage Jambalaya
8 ounces Raw Shrimp
8 ounces Sausage (I use Italian)
1 can chicken broth
2 cups instant rice
1 bag frozen pepper & onion mix
1 tablespoon oil

Heat oil in a over medium-high heat; add sausage and pepper-onion mix; cook, stir occasionally, until vegetables are soft. Add chicken broth and bring to a boil. Add rice and stir, cover and cook for approx 5 minutes. Add shrimp and stir. Remove from heat and let stand, covered, until shrimp cooked through, normally 5-6 minutes. Enjoy!!!!

I like the no annual fee part! Imagine getting something back without being charged for it. :)

My favorite recipe is for Easy Beef Stroganoff:

1 1/2 lbs lean beef, cut into thin strips about 1" long (sirloin or rib eye works best, but I've used round or flank, marinated beforehand)

1 pkg favorite noodles (I like extra wide egg noodles for this dish)

1 small container sour cream

1 doz. mushrooms, sliced thin

1/2 to 1 cup red cooking wine

1/2 to 1 cup heavy cream or half and half

Cook pasta until desired tenderness. Keep warm. Sear mushrooms over medium heat in large skillet and then simmer in about 1/4 to 1/2 cup wine until tender and wine is reduced. Remove mushrooms and add beef strips to the skillet, turning up heat a little more if necessary. Beef should cook just until no longer red and most of wine has evaporated. Stir to prevent sticking. When beef is done, reduce heat to simmer and add mushrooms back to the skillet. Add remaining wine and mix well, deglazing skillet. Gently fold in sour cream, stirring constantly. Add heavy cream or half and half until sauce is desired consistency. Remove from heat. Drain noodles and pour into large serving dish. Pour beef mixture over noodles and serve.

Skillet Sausage & Cabbage
1 package smoked sausage (I use the Hot/Spicy)
1 medium onion
6 cups coarsely chopped cabbage
1 cup chicken broth
1 clove garlic
1 tsp italian seasoning
1/2 tsp pepper
Saute sliced sausage over med. heat until brown. Set aside on paper towel. Add sliced onion and saute 2-3 minutes. Add cabbage and cook stirring often, 8 min. Add sausage, broth & remaining ingredients. Reduce heat to med-low and cook 10 min. on until cabbage is tender.

Very quick, easy and inexpensive dinner! I found the italian seasoning at the Dollar Store!

I call this "White Spaghetti" and it's what I'll be having for dinner tomorrow night. ;)

Ingredients:
1 lb Spaghetti
1 lb Italian Sausage (ground)
2 cloves Garlic (chopped)
1/4 c Olive Oil
1/4 c grated Parmesan Cheese
Red Pepper Flakes (to taste)

Instructions:
-Boil pasta

-While pasta is boiling, put a bit of oil in a small skillet or sauce pan and cook the garlic. Once your garlic is ready, then brown your sausage with it. Don't burn the garlic! Drain the oil off the sausage.

-Drain the pasta and put it back in the pan. Add the olive oil and mix well.

-Mix the sausage and the rest of the ingredients with the pasta. Make sure to mix it up good so the cheese can melt and get gooey!

Eat it up! I always put a little extra Parmesan on the top of mine to give it extra cheesiness.

Garlic Lime Chicken
6 – Skinless, boneless chicken breast – cut into 1” chunks
1 cup butter
2 medium garlic heads, diced
1 cup all-purpose flour
1 lime
1 T lemon pepper seasoning

Place chicken, flour, salt, pepper and lemon pepper seasoning in a plastic bag and shake well.

Melt butter in a large skillet over medium heat, add garlic and sauté 3 to 4 minutes, until it starts to change color. Sauté chicken in garlic butter mixture for 10 to 15 minutes, or until juices run clear.

Squeeze lime over cooked chicken and add salt, pepper and lemon pepper seasoning to taste.

"My Hub Can Eat this for a Week" Chili

Ground beef or turkey (1lb)
1 can of corn
1 can of black beans
1 28oz can of crushed tomatoes
1 packet ranch dip mix (dry)
1 packet taco seasoning (dry)

Fry up beef or turkey until brown. Put all ingredients into a crockpot on low for about 2-4 hours. Serve with shredded cheese, sour cream, guacamole, and use tortilla chips to scoop! No spoon needed!

Stove Top Stuffed Chicken
Ingredients

* 2 lbs chicken breast
* 4 tbs butter
* StoveTop Everyday Stuffing
* 1/2 C. water

Instructions

1. Flatten the chicken breast as much as possible. Preheat oven to 375.
2. Mix together 4 tbs melted butter and 3/4 the canister of stuffing with water.
3. Coat the rough side of the chicken breast with stuffing and then roll the chicken
4. Place into 8X8 casserole. Pour leftover stuffing into the casserole with the chicken rolls.
5. Bake for 40 minutes or until chicken in done.

Corn Stack

1 lb. hamburger

2 big cans chili beans (I used Brooks brand mild chili beans)

1/4 C. Ketchup

Corn Chips

Lettuce and cheese, shredded

How to make it:

1. Brown your hamburger and warm your beans. When the burger is done, add it to the chili.

2. Add in the ketchup. You could add chili powder if you want more flavor of chili. simmer for about 7 minutes to meld the flavors.

3. Chop your lettuce (and tomatoes if you want)

4. Stack in this order: First the chips, then the meat, then the lettuce, and finally the cheese on top.

1 package extra-wide egg noodles
1 package ground beef
1 big can cream of mushroom soup
1 can whole kernal corn
1 package cream cheese

Boil noodles.
Brown ground beef, mix in cream cheese cook on low until mixed throughout, add in corn and COM soup until heated.
Drain noodles, mix ingredients together & yummo!

Priest Chicken

4 or 5 frozen boneless skinless chicken breasts
1 packet Italian salad dressing mix
1 8oz package cream cheese
2 cans cream of chicken soup

Mix all ingredients together, dump in the crock pot, cook on low for 6-8 hours.

We like to serve it with brown rice and mixed veggies but it's good with noodles or potatoes too.

Chocolate Chip Coconut Macaroons Recipe

ngredients:

* 2 cups flaked coconut
* 1/2 cup mini semisweet chocolate chips
* 1/3 cup all-purpose flour
* 1 teaspoon salt
* 2/3 cup sweetened condensed milk
* 1 teaspoon vanilla extract

Directions:

1. In a small bowl, mix the flour, coconut and the salt.
2. Add the condensed milk and vanilla and stir until well mixed. The dough will be stiff.
3. Drop by tablespoons onto greased cookie sheet (or nonstick). What you will want to do is create a small hole in center of your dough, add about 5 of the mini chocolate chips and place a small amount of dough on top of each cookie.
4. Bake at 350 degrees for approximately 15 minutes or until cookies are golden.
5. Enjoy!

Here's my easy recipe for a tasty main dish (using six ingredients)

Potatoes, peeled & chunked
Carrots, peeled & sliced
Onion, chopped
Stew Meat (how much you can afford or desire)
Cream of Mushroom (or Cream of Celery) soup
Can of Beef Broth
Put all of the ingredients in a crock pot on high for a couple hours. Turn down to low and cook until it's supper time. Enjoy!

No Bake Healthy Banana Split "Cake"
Ingredients:
16 graham cracker squares
1-2 bananas, sliced
1 cup strawberries, sliced
1 cup canned pineapple pieces
2 sugarfree vanilla pudding cups
Lite whipped topping

Place graham crackers in the bottom of an 8×8 pan. Layer remaining ingredients in the order listed above. Refrigerate before enjoying.

15 minute Chicken Gumbo

Ingredients

-1 spray(s) cooking spray
-1 package(s) frozen gumbo-style vegetables, 16 oz, a mixture of okra, peppers and onions
-29 oz canned diced tomatoes, with mild chiles
-12 oz refrigerated grilled chicken breast fillet, cubed, about 3 cups
-1 Tbsp all-purpose flour
-1 tsp Creole seasoning

Instructions
1. Coat a large skillet with nonstick cooking spray. Add vegetables and sauté over high heat, stirring frequently, for 2 minutes. Stir in flour and cook 1 minute more.

2. Stir in tomatoes, chicken and Creole seasoning. Cook over medium heat, stirring frequently, until hot, about 6 minutes.

Yields about 1 1/2 cups per serving.

One part that I love about the blue card is that there is no annual fee and that is perfect! Let me start by saying I love pork chops and gravy but its so unhealthy so I have a healthier way to make it

4 pork chops
1 can of cream of mushroom
2 tblsp of oil
salt and pepper if needed

turn the skillet on med high and add the oil. Fry each side about 1 minute each. You can add salt and peper to flavor. Remove from frying pan then put in a baking pan. Pour the cream of mushroom over top and bake at 375 for 40 minutes or until done. Simple and just like pork chops and gravy!

2 cucumber
4 Roma Tomatoes (I choose firm ones)
1tsp Garlic Powder
1tsp Pepper
1tsp Salt
3-4 TBS Balsamic Vinegerette Dressing

1. Chop veggies in small pieces
2. Combine seasonings and dressing and pour over veggies.
3. Let it marinate in the fridge for 1 hour before serving.

**So awesome! Everyone likes it and it is a nice addition to a bbq in the summer**

Orange chicken with rice

3lbs of chicken cut up into chunks
1/3 cup frozen oj concentrate
2 TBS butter
1/2 tsp ground ginger
Cooked Rice (the 4 serving amount)

1. Place cut up chicken (I sprinkle mine with salt and pepper) in a baking dish and bake at 350 for 35 mins.
2. In a saucepan combine oj, ginger and butter and heat through.
3. Pour mixture over the chicken and bake for an additional 20 mins.
4. Spoon chicken and OJ mixture over cooked rice.

2lbs boneless/skinless chicken cut into 1 inch pieces
4-5 med potatoes cut into pieces
16 oz Salsa
4 oz can of green chilis
1 envelope taco seasoning
1 can tomato paste

Combine all ingredients in a crockpot and cook on low for 7-9 hours.

**Freezes well**

Breakfast Casserole

6 large eggs
1 1/2 cups milk
1tsp chicken grill seasoning (I use a seasoned salt mixture)
3 slices of bread torn into small pieces
12 oz Chicken smoked sausages
1 cup cheddar cheese

1. Prepare a 2qt baking dish.
2. whisk eggs, milk and seasonings together.
3. Place bread on the bottom of the baking dish. Then top with chicken sausage pieces and cheese.
4. Cover and refrigerate overnight. Pull out in the morning and let sit for 30 mins to come to room temp.
5. Bake at 350 for 45-50 mins.

**I love to prepare this on Christmas eve so Christmas morning we wake up, do presents and have this all ready to go in the oven.

***You can also change the chicken sausage for some other meat. We were thinking about cutting up bacon this year.

My recipe:
Stuffed Chicken Breast

Ingredients
4 chicken breasts
1 Cup feta cheese, cut into small pieces
8 pieces semi-dried tomatoes, chopped (reserve some oil)
1 tbs. freshly chopped tarragon

Method
Using a long, thin knife and keeping the opening narrow, cut a pocket into the chicken breast (careful not to cut through), mix together cheese, tomatoes and tarragon, fill pockets with mixture and secure with toothpicks. Rub each breast generously with the oil from the tomatoes, and pan-fry for 20 minutes or until cooked through.

Serves 4

Here's a tasty recipe for a taco bake:

1 lb. of ground beef (I use less)
1 can tomato soup
1 cup salsa
1/2 cup milk
6 flour tortillas, cut or tear into pieces
2 cups grated cheese

Brown beef in skillet and drain off grease. Stir in soup, salsa, and milk. Stir well, then add tortillas. Mix in half of the shredded cheese. Cover, then bake for 25 minutes in a 400 oven. Sprinkle remaining cheese over the top and return to oven (without covering) for 5 more minutes or until the cheese melts.

Note: if you don't eat red meat, this recipe is also great with a can of beans (I prefer black beans), drained, instead.

Vegitarian casseroll

1/3 cup olive oil
8 red potatos cubed
2 large red onions sliced and seperated
6 romain tomatoes sliced
Peperjack cheese to taiste

layer cubed potatoes, sliced tomatoes, and onions in caseroll dish. Drizzle olive oil as evenly as possible over contents. Place in over for one hour at 475. take out and place peperjack cheese on top. I use about half of a block. Place in over for 20 min. Take out, let cool, enjoy!! Delicious :)

1 package Hillshire farm Turkey Smoked Sausage with Pepper Jack Cheese Links (or any sausage links), diced
2 cups elbow macaroni (cooked)
1 bell pepper (any color), diced
1/2 onion, diced
1/2 jar any spaghetti sauce
1 cup celery, diced

Cook elbow macaroni. Drain; leave in strainer. In a skillet brown diced sausage links, onion, celery, and bell pepper until cooked through. Mix in elbow macaroni; pour spaghetti sauce over macaroni/sausage/vegetable mixture. Stir. Serve hot.

Here is a recipe for Chicken in Puff Pastry. It's easy, yet elegant. Very impressive to serve.

1 pkg puff pastry sheets
8 oz cream cheese, softened
Garlic Powder to taste
1 Tablespoon dried Parsley flakes
4 halved, boned & skinned, chicken breasts
1 egg, beaten

Remove puff pastry from freezer to thaw.
Place cream cheese in bowl, then add garlic and parsley flakes. Mix well. Set aside.
Roll puff pastry sheets on lightly floured surface. Cut each sheet into two pieces (large enough to enclose and seal around the chicken breast). On each of the four pieces, place 1/4 of the cream cheese mixture, then top with a chicken breast half. Seal edges tightly by first brushing the edges with the beaten egg.
Place chicken/pastry seam-side down, on an ungreased baking sheet. Brush top with remaining egg. Bake in 425-degree oven for 25 minutes.
Chicken will be tender, juicy, and delicious. Enjoy!

I LOVE the no-annual fee but you get cash back thing with the Blue Cash card.

This is one of my favorite ways to prepare salmon. So simple and so amazing!


Pan-seared Salmon with Leeks and Balsamic
Cooking spray
3 leeks, white and light green parts only, quartered and thinly sliced
4 6-oz salmon fillets, with or without skin
Salt and pepper
1/2 c. balsamic vinegar
1 Tbsp. honey

Coat a large nonstick skillet with cooking spray; add oil. Place over medium-high heat; add leeks, and sauté 3 to 4 minutes or until soft. Remove from pan and set aside.

Sprinkle fish with 1⁄4 teaspoon salt and 1⁄8 teaspoon pepper. Add fish to pan; cook 3 to 4 minutes on each side or until lightly browned and fish flakes easily when tested with a fork. Remove from pan; set aside, and keep warm.

Add vinegar, honey, 1⁄4 teaspoon salt, and 1⁄8 teaspoon pepper to pan. Cook over medium-high heat 3 to 4 minutes or until reduced by half. Divide leeks evenly over fish; drizzle with sauce.

Yield: 4 servings (serving size: 1 fillet and 1 tablespoon sauce).

My easy peasy recipe that is a go-to for our family:

2 cans of green beans (blue cut)
2 cans of diced potatoes
1 package of smoked sausage
1 can of sauerkraut (optional)

Cut smoked sausage into bite sized pieces. Open potatoes and drain. Layer each in a casserole dish and bake at 350 for 35-45 minutes. You can either add the sauerkraut before putting it in the over (if you like it) or you can heat it up on the stovetop (if there are kiddos in the family who don't like it).

We usually eat it with bread or baked rolls and butter. And it reheats really well!!! My husband takes it to work so I always make extra.

Chicago Style Deep Dish Pizza

1 Tube Pizza Dough-Thick Crust
1 lb. Sweet Italian Turkey Sausage
fresh crimini mushrooms-sliced
14.5 oz fire-roasted diced tomatoes, drained
1 large onion, diced
Mozzarella cheese-shredded (you can also add provolone if you desire)

Heat oven to 350 degrees-press dough into 13x9 dish. Cook sausage until no longer pink, drain and put on pizza dough. In same an, saute mushrooms and onion for 5 minutes, add drained tomatoes and heat through. prinkle sausage with cheese, top with vegetables and sprnkle with more cheese. Bake 25-30 minutes, or until done. Remove from oven, let rest for 5-10 minutes, slice an njoy.

Tequila Chicken
1/4 C Tequila (Jose Cuervo)
1/4 C Canola Oil
2 Tbsp. Ground Cumin
2 cloves garlic, chopped
1/4 C fresh Cilantro,copped
4 boneless skinless Chicken Breasts

Pre-heat oven to 350. Combine first five ingredients and mix well. I usually put all in a large zip-lock bag, add chicken and coat well. Place chicken(after coated) on cookie sheet and bake 20-25 minutes, or until done (165 degrees-internal temp). Remove from oven and let rest 5 minutes. Serve with Cilantro Lime Rice.

Cilantro Lime Rice
2 C Long-Grain Rice
3 C Water
2 limes, zested and juiced
1/4 C fresh Cilantro, chopped
2 Tbsp Butter

Put rice, juice from 1 lime and water in pot, bring to boil, cover and reduce to simmer. Cook 20 minutes, or until done. Remove from heat, add butter, cilantro, lime zest and lime juice, to tase. Serve with Tequila Chicken

Pork cooked in Cream

4 to 6 pieces of pork
(I use loin/boneless chops)
A couple Tablespoons of Flour
2 Tablespoons shortening
1 small carton of cream

Coat pork with flour. Brown meat in hot shortening. Pour cream over. Cover. Simmer over low heat for 40 minutes. Enjoy!
